Healthy, fast, and tasty. One kind of berries or a mix of them, is a breakfast favorite.

Makes a loaf of 12 slices

  • 1 ½ cups (192g) Cascade Milling Organic All-Purpose Flour

    ½ cup (70g) Cascade Milling Organic Whole Wheat Flour

    ½ cup (100g) granulated sugar

    1 ½ tsp baking powder

    ¼ tsp baking soda

    2 (66g) large egg whites

    1 large egg (50g)

    ½ cup (118ml) milk

    ½ cup (50g) sour cream

    ¼ cup (54g) canola oil

    ¼ cup (56g) unsweetened apple sauce

    2 tsp (8g) vanilla extract

    1 cup (148g) fresh blueberries

    1 cup (144g) fresh blackberries

    1 Tbsp of All-Purpose flour for coating the fruits

  • 1. Preheat up the oven to medium heat (350°F or 180°C).

    2. In a large bowl, mix both Cascade Milling Organic Whole Wheat and All-Purpose flours with the sugar, baking soda and powder, and salt.

    3. In another bowl, whisk the wet ingredients: egg whites, egg, milk, sour cream, apple sauce, oil and vanilla extract until homogeneous and “bubbly” on the surface.

    4. Add to the flour blend.

    5. Toss the berries with the spoon of flour, until well coated.

    6. Incorporate gently the berries in the batter.

    7. Pour the fruity batter in a greased 9x5 loaf pan.

    8. Bake for 60 minutes or until an inserted toothpick in the center of the loaf comes out clean.

    9. Transfer on a wire rack to cool off.

    10. Serve with Greek yogurt or spread whipped butter on the slice.

Tips:

- Off-season, substitute fresh berries with frozen.

- For a richer loaf, substitute the applesauce with the same amount of sour cream.

- For a nutty crunch, use walnut mixed with the berries.
