Makes: 12 fritters

  • 1 ¾ cups (233g) Cascade Milling Organic Pancake Mix

    2 large eggs (100g), beaten

    2/3 cup (161ml) milk

1 tbsp (14g) vegetable oil + vegetable oil for frying

2 cups (220g) of Washington apples, peeled and diced

Powdered sugar or cinnamon sugar for coating

  • 1. Heat the oil in a minimum 2 inches deep frying pan or a deep fryer to 375°F (190°C).

    2. In a large mixing bowl, whisk the Cascade Milling Organic Pancake Mix with the eggs, milk, and tablespoon of oil.

    3. Add the apple dice to the mixtures.

    4. Using 2 tablespoons, transfer the batter to the hot oil forming 2-inch-diameter balls. Flip the fritters on all sides as they turn golden. For a consistent fry, do not overcrowd the fryer.

    5. Transfer the fritters to a plate lined with an absorbent paper towel.

    6. Toss the fritters in a bowl with cinnamon sugar while still warm, alternatively sprinkle with powdered sugar.

Ingredients on a dark plate: an apple, a raw egg, flour, sugar, oil, lemon juice, and an egg white.

Tips:

Add 1 teaspoon of ground cinnamon to the batter and sprinkle with powdered sugar for a perfect balance.
