A savory breakfast or a simple one-bite appetizer to impress your friends.

Serves: 6 (3 blinis per person)

  • 1 cup (132g) Cascade Milling Organic Pancake Mix

    2/3 cup (156g) of cool water

    2 thin slices (80g) of smoked salmon

    ½ cup (115g) Sour cream or crème fraiche

    Freshly ground black pepper

    Sage cut in thin strips (optional)

  • 1- Preheat a griddle at 375 degrees F or put a nonstick pan on a medium-hot burner.

    2- In a bowl, mix the Cascade Milling Organic Pancake Mix with the cool water. Do not overmix.

    3- Pour a ¼” cup of batter at a time on the greased cooking surface to form small 2” rounds.

    4- Flip after 2min or until golden brown. Cook the other side until well done.

    5- Remove from the grill and let fully cool on a wire rack.

    6- Assemble the toppings on the blinis with the sour cream first, a small folded piece of salmon,

    some freshly ground black pepper and a couple of strips of sage.

Tips:

You can use other smoked fish and a splash of lemon juice to lift the flavors.

If you have capers, add them on top of the salmon, for some tannic tartness.
