Pat’s favorite bread with its extra buttermilk crispy crust.

Makes a round loaf of almost 2 pounds, 12 slices

  • 2 cups (280g) Cascade Milling Organic Whole Wheat Flour

    2 cups (256g) Cascade Milling Organic All-Purpose Flour

    4 Tbsp (50g) granulated sugar

    ½ cup (61ml) milk

    1 cup (244ml) buttermilk

    1 large egg (50g)

    ½ tsp (4g) salt

    1 cup (145g) raisins

    Glaze for a crispy crust:

    ¼ cup (61g) buttermilk

    ¼ cup (56g) melted butter

    Optional: If you don’t fancy raisins, no need to add them.

  • 1. Preheat up the oven to medium/high heat (375°F or 190°C). Put a cast iron pan in the oven at the same time if you have one. It will provide a crispier under.

    2. In a large bowl, mix both Cascade Milling Organic Whole Wheat and All-Purpose flour with the sugar, baking soda and powder, and salt. Add the buttermilk and egg. Mix so it starts forming a ball. Incorporate the raisins.

    3. Transfer the dough to a light flour board and finish kneading.

    4. Pull the hot cast iron from the oven or use a greased baking sheet where to transfer the round-shaped dough.

    5. In a small bowl, mix the buttermilk with the melted butter. Brush the loaf with the mixture.

    6. Use a sharp knife to notch the top of the loaf.

    7. Bake for 50 minutes or until an inserted toothpick comes out clean. You can brush with the glaze a couple of times while baking.

    8. Serve with whipped butter.

Tips:

- Substitute the raisins with dried cranberries and chopped walnuts.

- If you only have one of the Cascade Milling organic flour, they can be substituted:

o When using 4 cups of All Purpose flour, use only ¼ cup of milk (instead of ½ cup)

o When using 4 cups of Whole Wheat flour, use ¾ cup of milk (instead of ½ cup)
