Sweet Potato Waffles

Hearty power food and 4-ingredient only waffle, to start your day.

Makes 5x4” square waffles

  • 1 cup (132g) Cascade Milling Organic Pancake Mix

    1 medium (151g) sweet potato, peeled and cooked

    ¾ cup (183ml) milk

    1 large egg (50g)

    Optional: Toasted nuts (pecans or walnuts) or sunflower seeds to add as topping before closing the waffle maker. To toast nuts, gently flip the nuts in a heated pan, until you can see golden color develop and can smell the nutty aroma.

    Coat or sprinkle cinnamon sugar or powdered sugar for a sweet finish.

  • 1. Heat up the waffle maker to medium/high heat (375°F)

    2. Use a high-speed blender to chop/mash the sweet potato. Add the Cascade Milling Organic Pancake Mix with the milk and egg in the blender and mix until homogeneous. Do not overmix.

    3. Grease the waffle maker and pour the batter. Optionally add the nuts on top before closing the lid. Cook for 4-5min, until golden or until the waffle maker indicates it is ready.

    4. Serve with syrup, powdered sugar, and additional nuts.

Tips:

- Add 2 tsp of ground cinnamon to the batter for pairing with the sweet potatoes.

- If you do not have an electric blender, in a bowl, mash the sweet potatoes with a fork until there are no more chunks. Then add the pancake mix, milk, and egg and mix with a whisk until homogeneous.

- Grease the waffle maker with butter for even tastier waffles!
